Two local wheat cultjvars of Iran,Roshan and Omid, and two new cultivars,Karajl arid Karaj 2 , which have been respectively derived from crosses of Roshan and Omid with different Mexican cultivars, were compared for their protein and amino acid compositions.The grain and flour of Roshan contained approximately 1.0% more protein than Karaj 1 . The differences between Roshan and Omid and between Omid and Karaj 2 for protein were not significant . amid contained 0.98% (in grain ) and 0.74% (in- flour ) more threonine than Roshan.Omid also contained 1.86% and 1.12% more essential amino acids than Roshan in its grain and flour, respectively . Roshan , however,contained 3.21% more glutamic acid in its grain as compared to Omid . The grain of Karaj i showed 0.45% more lysine over Roshan.Karaj 1 also contained 0.57% and 0.53% more threonine than Roshan in its grain and flour, respectively.The flour of Karaj 1 also contained about 1.60% more essential amino acids than Roshan . The flour of Karaj 2 showed an increase of 4.09% glutamic acid over Omid. The differences between amid and Karaj 2 for total essential amino acids were not significant.
